Shayna Taylor’s Dark chocolate chip almond pulp cookies
Ingredients
• 1 cup wet almond pulp
• 1 organic egg or flax egg for vegan
• 1/3 cup honey
• 1 tsp. Cinnamon
• 1/2 cup chopped nuts or seeds (pecans is what I use)
• 1/2 cup chopped non sweetened dark chocolate
• 1 tsp alcohol free vanilla extract
Directions
1. Turn oven on to 350F
2. Mix egg, vanilla, honey, and nuts. Add almond pulp and mix until well combined.
3. Add chocolate chunks and mix again. Scoop into balls and line on a baking sheet covered with parchment paper.
4. Bake for 20 min or until crispy.
