Moody Foody’s Puerto Rican Style Shrimp Skewers with Mango Salsa
Ingredients
2 lbs of peeled and deveined shrimp -
1 teaspoon of Sazon
1 tablespoon of sofrito
1 tablespoon of minced garlic
1 tablespoon of oil
1 teaspoon of adobo
1 teaspoon of oregano
Zest of a lime
Juice of 1 lime -
salt to taste
For the Mango Salsa:
2-3 ripe mangos, diced
1/2 red onion, diced
1 jalapeño, diced
1 small red pepper, diced
1 head of cilantro
Salt, pepper, adobo to taste
Directions
1. In a bowl, combine the peeled and deveined shrimp with Sazon, sofrito, adobo, oregano, oil, minced garlic, lime zest, and lime juice. Mix well to ensure the shrimp are coated with the seasonings. Let the shrimp marinate for 15-20 minutes.
2. While the shrimp is marinating, prepare the mango salsa. In a separate bowl, combine the diced ripe mango, red onion, jalapeño, red pepper, and chopped cilantro—season with salt, pepper, and adobo to taste. Mix well and set aside.
3. Preheat the grill to medium-high heat.
4. Thread the marinated shrimp onto skewers.
5. Place the shrimp skewers on the preheated grill and cook for 2-3 minutes on each side or until the shrimp are pink and opaque. 6. Serve the grilled shrimp skewers with the mango salsa on the side. Enjoy your Puerto Rican Style Shrimp Skewers with Mango Salsa!
