Eric Adjepong’s Pineapple Ginger Drink
Ingredients
8 ounces fresh ginger, peeled
1½ pounds fresh pineapple, peeled, cored, and coarsely chopped
½ teaspoon kosher salt
4 cups hot water
Juice of 1 lime
1 cup honey, or to taste
Club soda, for serving (optional)
Directions
Use the flat part of a chef ’s knife or a heavy pot to smash the ginger.
In a blender, add the ginger, pineapple, salt, and 2 cups of water and blend on high until well incorporated. Pour through a fine- mesh sieve into a pitcher. Rinse the blender with ½ cup of water and add it to the pitcher. Stir in the 4 cups hot water and the lime juice. While it’s still warm, sweeten the tea by whisking in the honey. The tea can be enjoyed hot, or chilled and served with club soda.
