Ingredients

MAKES 4 servings
START TO FINISH: 10 minutes


1 small red cabbage, sliced thinly (about 8 cups)
1 red onion, sliced thinly
1 large carrot, grated
6 green onions, sliced thinly
1 broccoli stem, grated

CITRUS DRESSING
3 tablespoons apple cider vinegar
11/2 tablespoons pure maple syrup
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 garlic clove, minced
Juice of 1 orange
1 teaspoon orange zest
1 teaspoon sesame oil (optional but recommended)
1 teaspoon salt

Directions

1. In a bowl, combine the cabbage, red onion, carrot, green onions, and grated broccoli stem.

2. Make the dressing: In a jar or other container, whisk together all the dressing ingredients until combined. Pour the dressing over the salad, toss until coated, and enjoy.

Storage: Store, fully prepared, in the fridge for up to 5 days.
