August DeWindt’s Chipotle BBQ Shrimp & Scallop Skewers
Ingredients
Chipotle bbq sauce:
● ⅔ cup ketchup
● 3 tbsp apple cider vinegar
● 2 chipotle peppers in adobo sauce minced
● 3 cloves garlic minced
● 2 tsp smoked paprika
● ½ cup brown sugar
● 1 tsp kosher salt
● ¼ teaspoon black cracked pepper
Skewers:
● 1/2lb Large Shrimp peeled with tail on or off (about 12 shrimp)
● 1lb sea scallops (about 12-16)
● 1 ½ cups diced Pineapple
● 1 small Red Onion cut into 1 inch pieces
● Red Bell Pepper cut into 1 inch pieces
● Pinch of salt & pepper
Directions
● In a small sauce pan over medium heat add all the ingredients for the chipotle bbq sauce. Bring to a boil while stirring. Reduce to a simmer and let simmer for a few minutes.
● Heat a grill to medium high.
● If using wooden skewers, soak in water for an hour before grilling. Thread the shrimp, scallops, pineapple, onion and red pepper onto skewers. Season with salt & pepper on both sides. Brush the skewers with the BBQ sauce all over.
● Place on the grill and cook for 3-4 minutes per side, or until shrimp are pink and the scallops are opaque.
● Feel free to brush with a little more bbq sauce once the skewers are off the grill. Eat and enjoy!
