Brunch with Babs’ Grilled Salmon Salad
Ingredients
2 lbs fresh salmon
Olive Oil for grilling
Salt and Pepper
1 cup diced celery
1/2 cup diced red onion
2 Tbsp minced fresh dill
2 Tbsp raspberry vinegar (or other light vinegar of your choice)
2 Tbsp olive oil
1/2 tsp kosher salt
1/2 black pepper
1/4 cup Mayo
Directions
Brush salmon with olive oil and sprinkle with salt and pepper.
Grill 5-7 minutes on each side, until medium rare to medium.
Chill, remove skin and chop.
Combine salmon in a medium bowl with remaining ingredients.
Stir gently to combine.
Serve immediately or chill
