Paul Liebrandt’s King Salmon Pave
Ingredients
Serves 4
4x 4oz King Salmon Pave
3oz Avocado Oil
1 Lime
½ tsp Sea salt
½ tsp Fine Chive
2 Avocados
1 tblsp Lime Juice
1 tblsp Almond Oil
1 tblsp Chopped Marcona Almond
½ tsp Sea Salt
Directions
Remove avocado from skin and stone- toss in lime juice and salt, almond oil.
Place in food processor and blend 1 min to puree, remove and fold in chopped almonds and check seasoning.
Warm grill to medium/high heat, take salmon and dress in oil let sit at room temp for 30 mins.
Lay salmon on grill and cook for 1min both sides-remove from heat and season with sea salt and lime zest, sprinkle with chives.
On serving plate spoon avocado mix in center and lay salmon over the top.
