Ingredients

4 (6-oz.) tenderloins of beef
1-2 tablespoons olive oil
1/4 cup Cajun seasoning* (combine Paprika; Cayenne pepper; Garlic powder; Onion powder; Black pepper; White pepper; Dried oregano; Dried basil; Dried thyme)
1 tablespoon chopped fresh flat-leaf parsley (for garnish)

*Melba’s Cajun Spice Seasoning
-1T Onion Powder
-2T Garlic Powder
-1T Ground Black Pepper
-1T Dry Thyme
-1T Dry Oregano
-3T Smoked Paprika
-1T Cayenne Pepper
-2T Kosher Salt

Directions

Preheat oven to 350 degrees

Heat your Cast Iron Skillet to med-high heat. Pour 1 tablespoon of oil into skillet.

Sprinkle fillets with your Cajun seasoning.

Place fillet of beef in oiled cast iron seasoned; sear each side slightly charred, then (optional) transfer to oven and cook for additional 4-6 minutes or until desired doneness.

Transfer to a platter & serve.

Cleaning cast iron
Dry completely & always clean while it is warm-hot by hand. Make a paste by combining coarse salt & water & with a cloth, scrub the bottom of the pan to remove all residue. Never use steel wool, dishwashing soap or put it in the dishwasher. Dry thoroughly. Take one teaspoon of vegetable oil & with a paper towel rub it into the bottom of the pan. Store away.
