Ingredients

What you'll need for scrambled eggs:
2-3 Large brown eggs per serving
2-3 Scallions (green onions…to cut use vegetable cutting scissors)
5-10 Cherry tomatoes (cut into halves or quartered)
Salt (to taste)
Pepper (pepper to taste)
Parmigianino and mozzarella
1-2 Fresh basil leaves (to cut use vegetable scissors)
¼ Cup of olive oil (just enough to cover bottom of pan)
Wooden chopsticks!!!

What you'll need for side of sweet potato home fries:
2 large pre-roasted sweet potatoes (with peels on, sliced)
¼ Cup of olive oil (just enough to cover bottom of pan)
Salt (to taste)
Pepper (to taste)
Cayenne pepper (to taste…hot!)

EGGS:
STEP 1: Heat pan on medium and add olive oil
STEP 2: Add salt and pepper (to taste) to oil
STEP 3: Add in eggs
STEP 4: Use chopsticks to gently stir eggs, as they cook, from edges inward
STEP 5: Once eggs are of consistency you like, plate them with chopsticks
STEP 6: Add uncooked tomatoes, scallions, basil and cheese directly to plated eggs
STEP 7: YOU'RE DONE!

SWEET POTATO HOME FRIES:
STEP 1: Heat pan on medium/high and add olive oil
STEP 2: Add salt, pepper and cayenne pepper (to taste) to oil
STEP 3: Add sliced sweet potatoes
STEP 4: Brown each both sides of sweet potatoes and serve with eggs
STEP 5: YOU'RE DONE!
