Joe Penovich’s Mahi Fish Sandwich
Ingredients
Mahi Fish Sandwich
5-6 oz of Mahi Filet (app 3/8-1/2 inch thick) *trimmed of all red meat is very important*
Grills Mahi Marinade Parts A and B
7" hoagie roll
Onions sliced thin
Tomato sliced (app 1/4"- 3/8")
lettuce shredded
Cheese optional (Cheddar, Provolone, American, Pepper Jack)
Mayonnaise
Marinade Parts A and B
Part A: Terryaki based Marinade recipe:
2 Cups Terryaki
1 Tablespoon Granulated Garlic
2 Tablespoon Dried Basil
Part B: Terryaki based thickened Grilling Glaze:
1 cup mayonnaise
1/2 cup Part A Marinade
Directions
Place filets in Part A until Marinade "cuts into the fish" for approximately 15-30 Minutes.
Coat filets in Part B grilling glaze. (keeps fish moist while flame grilling)
Place filets on a very hot, very clean, vegetable oiled Grill… (will not stick under these conditions)...(Flame ups encouraged)!
Prepare hoagie roll while fish cooks. (fish will cook very fast 3-4 minutes)
Split roll and lightly butter inside
Place on hot flat top grill to brown and crisp inside.
Apply thin coat mayonnaise to roll
Assemble fish, cheese (if chosen), lettuce, tomato & onion on roll.
Place sandwich under broiler for app. 1 min to add a "delicate crisp outside."
