Elaine Bianchini Irish Shortbread Cookies
Ingredients
1 cup butter
2/3 cup sugar
1/2 cup cornstarch
2 cups flour
Directions
1. Cream butter and sugar together until light and fluffy.
2. Sift in cornstarch and flour, mix well.
3. Press into a 10 3/4 x 7 inch pan.
4. Prick all over with a fork.
5. Bake in preheated 275 F oven for 30 minutes, then reduce heat to 250 F and bake 1 to 1 1/2 hours longer.
6.Remove from pan and sprinkle powdered sugar.
Cut into 20 finger shaped cookies.
