Gelman’s Kabocha Squash Recipe
Ingredients
1 KABOCHA SQUASH, CUT IN HALF AND SEEDS REMOVED
1 TABLESPOON OLIVE OIL
2 TEASPOONS MAPLE SYRUP
SALT AND PEPPER TO TASTE
6 OUNCES GOAT CHEESE
¼ CUP WALNUTS
2 TEASPOONS OR MORE OF BALSMIC GLAZE
Directions
PREHEAT OVEN 400 DEGREES
PLACE SQUASH ON A ROASTING PAN
SPRINKLE WITH OLIVE OIL, AND MAPLE SYRUP. SEASON WITH SALT AND PEPPER
COOK 1 HOUR OR UNTIL FORK TENDER
REMOVE FROM OVEN. SCOOP SOME OF THE LIQUID FROM THE CAVITY OF SQUASH INTO A BOWL AND MIX WITH WALNUTS
BREAK UP GOAT CHEESE AND SPLIT BETWEEN BOTH HALVES OF SQUASH AND TOP WITH WALNUT MIXTURE
DRIZZLE WITH BALSAMIC GLAZE
RETURN TO OVEN FOR 5 MINS TO MELT CHEESE
GARNISH WITH FRESH SAGE AND THYME FROM THE GARDEN
