Ingredients

½ C. all-purpose flour (sifted)
½ C. granulated sugar
½ C. ground pecans
½ C. old-fashioned oats
1 tsp. cinnamon
¼ tsp. baking powder
Pinch of salt
1/4 cup unsalted butter (melted)
2 Tbl. milk
2 Tbl. Corn Syrup
1 tsp. vanilla or orange extract
2 oz. melted milk chocolate

Directions

In a bowl, combine all the dry ingredients and set aside.

In the bowl of a stand mixer, combine the wet ingredients. Add the dry ingredients mixture and mix to combine.

Place level teaspoons of the batter onto a parchment or Silpat lined baking sheet…3 inches apart. (Cookies will spread in the oven)

Bake in a 375°F for 7 – 9 minutes, rotating the baking sheets halfway through. Keep a close eye on the on the edges of the cookies to avoid burning.

Remove from the oven and let cool on the baking sheets for 2 minutes. Carefully transfer cookies to a wire rack and cool completely.

Spread one cookie with a thin layer of melted chocolate and sandwich with another cookie on top. Repeat with remaining cookies.
