Skinny Mint Chocolate Haystacks –

makes 36; 60 calories/3 g fat/3.6 g fiber/5 g sugar
8 1/8 ounces general mills Fiber One cereal or All Bran (can just say generic bran cereal)
12 ounce bag of dark chocolate or semisweet chocolate chips
1 candy cane – crushed

Melt 1 bag of dark chocolate or semi-sweet chocolate chips in microwave in a large bowl on high for about 2 minutes or until melted (stirring occasionally).Once melted, mix in 1 sleeve of fiber cereal (8.1 oz). Once well blended, use a tablespoon to scoop out rounded cookies onto a cookie sheet lined with wax paper. Sprinkle with crushed candy cane. Refrigerate until set (about 1/2 hour).
